7 Healthy Crock Pot Recipes to Free Up Your Nights

I am in love. And my husband is totally OK with it. My crock pot is my best friend and secret weapon, especially as my training hours increase to double daily sessions on top of working full time. My trusty slow cooker ensures that a hot meal is waiting for me after a weary session at the pool or tempo run on the trails.

 

The great thing about a crock pot is that you can dump a bunch of ingredients in the pot, crank it up and let it go. Meals can be as healthy or decadent as you desire, and it’s quite difficult to mess it up. I actually own two crock pots – a cheap 1.5 quart model with a dial control and a fancy six-quart model that has a digital timer and automatically switches to warming at the end of the cooking time. Here are some of my tried-and-true recipes that are in heavy rotation come peak week:
